Rare first publication of Parmentier about the potato.
It tastes like a tuber during its captivity in Prussia following the Seven Years' War. He then tried to promote the potato in France as a solution to the famines of 1769 and 1770.
The potato was then reserved for animals, considered toxic and unfit for human consumption. In this book Parmentier shows that he has nothing and that a potato stripped of its greening is an important source of starch.
